The Best Split Pea Soup
Split pea soup
- 1 bag of dried split peas
- 1 diced carrot
- 1/2 yellow onion, diced
- 1 can of chicken or veg broth
- 10 cups of water (you might want to add more when it’s done. Depends on how thin or thick you like it)
- 1 tsp kosher salt, few grounds of fresh black pepper, 1 tsp thyme
This is the simplest recipe, but it is completely worth making.
Take a bag of dried split peas. Throw the whole bag (well, not the bag) into the pressure cooker. Then add a few pinches of kosher salt, ground pepper, garlic powder and a teeny pinch of parsley. Then add the diced carrot and diced onion. Add 10 cups of water and 1 can of chicken stock. Cook this for exactly 11 minutes. Stir it with a stick blender to whip it up. DONE.
